We sell Stoneys caught by Captain JJ of Marathon Key, perfectly
sized at 4-6 claws per pound. The "Cap'N" makes
a delicious version of the traditional mustard/citrus served
as accompaniment. We convinced him to share it with us, so
all Stoney orders will be shipped complete with JJ's tangy
sauce.
These Stone Crab Claws really should be called crab "thumbs."
As the crabs are brought on-board, Captain JJ and his crew
carefully remove the dominant claw, but return the squirming,
thumb-less critters back to the sea. Within a year or two,
that crab will grow a replacement thumb, and hopefully be
caught again. Through disciplined management, this exotic
yet sustainable resource has actually strengthened in recent
years.
